Nutrition is the most powerful control unit of human metabolism – and simultaneously the topic with the most myths and misunderstandings. Prof. Dr. Jörg Spitz systematically dispels nutritional errors in his lectures and books that have been perpetuated in Germany for decades.

The greatest misunderstanding of modern nutritional science: fat makes you fat and sick. This error, which has dominated nutritional medical thinking since the 1970s, has led to a massive increase in obesity, diabetes, and heart disease – because it seduced millions into replacing fats with refined carbohydrates and sugar. Prof. Dr. Spitz explains why high-quality fats – omega-3 fatty acids, olive oil, avocado – are essential for brain function, hormone production, and cell membranes.

Sugar, on the other hand, is the true disease-maker of the 21st century. Industrially processed sugar – sucrose, fructose-glucose syrup – promotes chronic inflammation, drives insulin resistance and type 2 diabetes, damages blood vessels, and favours cancer development. Prof. Dr. Spitz refers to the overwhelming scientific evidence that the sugar industry successfully suppressed for decades.

Micronutrients – vitamins, minerals, trace elements, and secondary plant substances – are the control centres of cellular metabolism. They activate enzymes, protect DNA, regulate gene expression, and act as antioxidants. A modern, processing-rich diet is systemically micronutrient-poor – with far-reaching consequences for health and wellbeing.

Prof. Dr. Spitz recommends a diet rich in vegetables, fruit, high-quality proteins, and healthy fats, and low in processed products, sugar, and white flour. In addition to diet, he considers targeted supplementation with Vitamin D, omega-3, magnesium, and other micronutrients to be sensible – based on individual laboratory values.
